Spicy Coconut Green Beans

Quick and simple recipe to give your green beans a whole new appetizing look that tastes fantastic. May even entice the fussiest of eaters with this one 🙂
Ingredients
- 250gm fresh green beans
- 1 tbs coconut oil
- 1/2 tsp black mustard seeds
- 1/2 tsp white split gram beans/lentils, urad dahl (optional)
- 1/2 tsp tumeric
- 1/2 tsp salt
- 1/4 cup unsweetened coconut flakes
- 1/4 tsp crushed chilli flakes (optional)
- 1/2 tsp of your favourite curry powder (optional)

Directions
- Snap off ends of green beans and cut into 1 inch pieces.
- Steam beans for 5 minutes in microwave.
- While they are steaming heat the oil in a large frying pan over medium heat. When oil hot add the mustard seeds and cover the pan with a lid until they stop popping.
- In the same pan add the lentils, turmeric, curry powder and salt, mix through.
- Add coconut and chilli flakes and cook for 1 minute.
- Add steamed beans and stir fry for 5 minutes.
Feeling extra? Add a handful of lightly crushed and toasted cashews before serving
