Curried Sausages

A 80’s classic dish, although I don’t really think that curried sausages will ever go out of fashion.  An Easy meal to make that even the kids will love to eat and its great for lunch the next day too, if there’s any left that is!

Ingredients

  • 1 tbsp butter/ghee
  • 1/2 kg Sausages (beef or pork)
  • 1 medium onion, sliced
  • 1 carrot peeled and sliced
  • 1/2 cup green peas
  • 1/2 tsp garlic powder
  • 2-3 tbs corn flour
  • 1 level tbsp of your fave curry blend or suited for the whole family try Lamb & Cashew Korma Curry Masala
  • 1-2 cups chicken stock
  • salt and pepper to season

Directions

  1. Heat the oil in a large pot until hot.
  2. Slice sausages on a angle and put into pot and cook until brown (set aside)
  3. Using the same pot, add the onion and garlic and saute for 2-3 minutes
  4. Add curry powder and stir in, mix until aromatic
  5. Add flour and mix in well for 1 minute
  6. Gradually pour in the chicken stock and keep mixing until it comes together
  7. Add carrot and peas, salt and pepper
  8. Add the sausages and bring to a simmer and cook until sauce starts to thicken
  9. Serve with rice or mashed potato
