Curry Puffs

Ingredients
- 1 pkt puff pastry sheets
- 4 tbsp milk
- 1 tsp melted butter or olive oil
- cup of water to seal the edges
- 2 cups frozen mixed vegetables
- 3 medium chopped boiled potatoes
- 1 small to medium chopped onion
- 3 tbsp olive oil
- 1 tbsp South Indian vegetable curry blend
Directions
- Pre-heat oven to 210c
- Heat oil in a large saucepan
- Add curry powder and onion and saute until onions are cooked
- Add the frozen vegetables and saute until heated through
- Turn heat down and cook vegetables for approx 5 mins
- Add the cooked potato and saute everything together approx 3 mins
- When finished allow mix to cool down slightly
- In a small bowl add milk and melted butter together
- Cut your puff pastry sheets into squares
- Add 1 tbsp of the filling in the center and fold the remaining side over (or any shape preference)
- Brush each pastry with the milk/butter mix and crimp the edges (or twist)
- Bake for 15mins
- Serve with delicious Traditional Qld mango chutney
