Curry Puffs



  • 1 pkt puff pastry sheets
  • 4 tbsp milk
  • 1 tsp melted butter or olive oil
  • cup of water to seal the edges
  • 2 cups frozen mixed vegetables
  • 3 medium chopped boiled potatoes
  • 1 small to medium chopped onion
  • 3 tbsp olive oil
  • 1 tbsp South Indian vegetable curry blend


  1. Pre-heat oven to 210c
  2. Heat oil in a large saucepan
  3. Add curry powder and onion and saute until onions are cooked
  4. Add the frozen vegetables and saute until heated through
  5. Turn heat down and cook vegetables for approx 5 mins
  6. Add the cooked potato and saute everything together approx 3 mins
  7. When finished allow mix to cool down slightly
  8. In a small bowl add milk and melted butter together
  9. Cut your puff pastry sheets into squares
  10. Add 1 tbsp of the filling in the center and fold the remaining side over (or any shape preference)
  11. Brush each pastry with the milk/butter mix and crimp the edges (or twist)
  12. Bake for 15mins
  13. Serve with delicious Traditional Qld mango chutney
