Green Fritters – Fabulously Healthy

Bust out your inner Leprechaun and try these tasty and healthy fritters.  Put your own twist on them and change out the veggies if you like.  Enjoy!

Ingredients

  • 2 cup frozen peas, defrosted (you could switch part of the peas for defrosted or fresh broccoli broken into smaller pieces)
  • 1 clove garlic
  • 1 tsp salt
  • 1/2 tsp Curry powder of your choice (Lamb & Cashew blend is good for this, delicate flavour and no chilli)
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1 tsp lemon zest (optional)
  • 1 tbs fresh mint (optional)
  • 2 tbs olive oil, for frying

Directions

  1. Blend half of your green veg with the sliced clove of garlic, the salt, and the eggs.
  2. Add the flour and baking powder, along with the lemon zest, mint, curry powder and a crack of pepper if desired, and stir to combine.
  3. Fold in the remaining half of your green veg
  4. Heat 2 Tbsp olive oil in a frying pan over medium heat and fry the fritters in batches.
  5. You can make them whatever size you want, although a heaped soup spoon makes around 8-10 fritters.
