Tomato Galette Recipe


Simple in creation yet a real tasty treat, perfect for pre-dinner or a lazy Sunday afternoon snack.


  • 1 chilli sliced
  • 1/3 red onion finely sliced
  • 3 tomatoes and 4 cherry tomatoes sliced
  • 1/2 tbs South Indian Vegetable Blend
  • 1/2 tsp chilli flakes
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 cups mozzarella cheese
  • 1/2 cup cheddar cheese
  • 2 sheets puff pastry


  1. Pre-heat oven to 180c
  2. Spray a baking tray with oil
  3. Lay in your puff pastry, join 2 sheets and stretch out slightly to create a rustic shape in the tray
  4. In a bowl mix the cheeses, mayo, chopped chilli and chilli flakes
  5. Spread the cheese mix over the pastry keeping a 4-5cm border free
  6. Sprinkly over a little curry powder then place on the tomato slices and sprinkle remaining curry powder, salt & pepper
  7. Add your cherry tomatoes and onion over the top
  8. Fold in the border of puff pastry towards centre and drizzle the whole area with oil
  9. Brush pastry edges with milk or egg and bake for 20-25mins until golden.
