Simple in creation yet a real tasty treat, perfect for pre-dinner or a lazy Sunday afternoon snack.
Ingredients
- 1 chilli sliced
- 1/3 red onion finely sliced
- 3 tomatoes and 4 cherry tomatoes sliced
- 1/2 tbs South Indian Vegetable Blend
- 1/2 tsp chilli flakes
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 cups mozzarella cheese
- 1/2 cup cheddar cheese
- 2 sheets puff pastry
Directions
- Pre-heat oven to 180c
- Spray a baking tray with oil
- Lay in your puff pastry, join 2 sheets and stretch out slightly to create a rustic shape in the tray
- In a bowl mix the cheeses, mayo, chopped chilli and chilli flakes
- Spread the cheese mix over the pastry keeping a 4-5cm border free
- Sprinkly over a little curry powder then place on the tomato slices and sprinkle remaining curry powder, salt & pepper
- Add your cherry tomatoes and onion over the top
- Fold in the border of puff pastry towards centre and drizzle the whole area with oil
- Brush pastry edges with milk or egg and bake for 20-25mins until golden.
