Curried potato salad with mango chutney

Curried potatoes on the run, really easy side dish to accompany just about any meal

Ingredients

  • 500 gms new potatoes (or red)
  • 2 tbs mayonnaise
  • 1 tsp Mudgeeraba Spices South Indian Vegetable curry powder
  • 1 tsp Mudgeeraba Spices Traditonal Qld Mango
  • Handful fresh coriander leaves
  • Handful of toasted almond flakes

Directions

  1. Boil the potatoes in a pan of salted water for 15 minutes or until cooked (until only just cooked-still a little firm)
  2. Mix together the mayo, curry powder and chutney
  3. Once potatoes have cooked, drain and dry off the potatoes
  4. When cooled down enough to handle cut into your preferred sized pieces
  5. Once potatoes have completely cooled, stir in curried mayo
  6. Season to taste and top with chopped coriander and almonds
  7. Add another dollop of Mango chutney on (only because its so delicious)
