Malacca Thai Laksa Nyonya Noodle Soup Recipe

Ingredients

Makes: 2 serves

Ingredients:
2 tablespoons Malacca Laksa Nyonya Noodle Soup Paste – Hot
6-8 large green prawns, shelled and prepped
1 cup water
400g coconut milk
Noodles of your choice, cooked and drained

To Serve:
1 bunch bok choy, trimmed and washed
Handful snow peas, trimmed and sliced thinly
Fried shallots
Sliced red chilli
Fresh mint leaves
Fresh lime

Directions

Add the Malacca Laksa Nyonya Noodle Soup Paste to a medium sized saucepan over a high
heat. Stir for a few minutes.

Add the water and coconut milk and stir until combined.

Add the prawns and reduce the heat to a low – medium simmer. Simmer for around 5 minutes or
until the prawns are red / pink in colour and the meat is opaque white and no longer translucent.

In 2 serving bowls, add the cooked noodles and top with the laksa curry sauce and prawns.

Serve with bok choy, sliced snow peas, fried shallots, red chilli, mint leaves and a squeeze of
fresh lime juice.
