🥦🥕🍆 Veggie Delight with a Curry Twist 🍛Ingredients:
- 1 large carrot
- 1 medium-sized eggplant
- A handful of broccoli florets
- 2 tbs of curry powder
- Salt to taste
- 2 tbs of olive oilSteps:
1. Start by washing all your veggies. Peel the carrot and cut it into thin slices. Cut the eggplant into cubes and break the broccoli into bite-sized florets.
2. Heat the olive oil in a pan over medium heat. Add the curry powder and stir it around until it's fragrant.
3. Toss in the carrots and eggplant. Stir them around so they're coated in the curry-infused oil. Let them cook for about 5 minutes.
4. Add the broccoli florets to the pan. Stir everything around and let it cook for another 5 minutes.

Whimsical Chutney Surprise SandwichIngredients: Whimsical Chutney Surprise SandwichIngredients:
4 slices of bread (whole wheat, sourdough, or white)
1/2 cup Indian chutney (Traditional Qld Mango)
1 ripe banana, sliced
1/4 cup crushed salted peanuts (or good quality peanut butter)
2 tbs cream cheese
2 tbs butter
2 tbs cream cheeseInstructions:
Layer it however it takes you, this is just an idea to get your juices flowing.
Butter one side of each slice of bread.
Spread cream cheese on the non-buttered side of two slices.
Layer chutney over the cream cheese.
Add banana slices on top of the chutney.
Sprinkle crushed peanuts or paste over the banana.
Drizzle honey on the peanut layer.
Top with the remaining bread slices, buttered side up.
Grill in a pan over medium heat until golden brown, about 3-4 minutes per side.
Slice and serve warm.

Curry Leaf Pesto Recipe - What a zesty twist!A u Curry Leaf Pesto Recipe - What a zesty twist!A unique blend of flavours that are both aromatic and refreshing. This versatile condiment can be used as a spread, a sauce, or a topping, bringing a vibrant touch to any dish.Ingredients
1/2 cup dried curry leaves, crushed
1/2 cup nuts (such as almonds, cashews, or pine nuts)
1/2 cup grated Parmesan cheese
2 cloves garlic
1/2 cup olive oil
1 tablespoon lemon juice
1/4 teaspoon chilli flakes (optional)
Salt and pepper, to tasteInstructions
Prepare the Ingredients
Begin by crushing the dried curry leaves if they are not already crushed. You can do this using your hands or a mortar and pestle.
Peel the garlic cloves and grate the Parmesan cheese if not pre-grated.
Blend the Ingredients
In a food processor, combine the crushed curry leaves, nuts, Parmesan cheese, and garlic. Pulse the mixture until it forms a coarse paste.
With the food processor running, slowly drizzle in the olive oil. Continue blending until the mixture becomes smooth and well combined.
Stir in the lemon juice and, if you like a bit of heat, the chilli flakes. Season with salt and pepper to taste.
If the pesto is too thick, you can add more olive oil or a splash of water to achieve your desired consistency.Transfer the pesto to a bowl or jar. Use it as a spread on sandwiches, a topping for roasted vegetables, a sauce for pasta, or however your culinary creativity inspires you!Storage: Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze the pesto in ice cube trays and transfer to a freezer bag for easy portioning.
Serving Suggestions: Try pairing the pesto with grilled chicken or fish for an exotic twist, or mix it into scrambled eggs for breakfast.
